Blueberry Lemon Yogurt Muffins

Ingredients
- 3 eggs
- 1/3 cup sugar
- 1/2 cup Greek yogurt
- 1/4 cup unsweetened apple sauce
- 2 tbsp honey
- 1 tspn vanilla
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 1 1/2 cups whole wheat flour
- 1 tspn baking soda
- 1/2 tspn baking powder
- 1/2 tspn salt
- 1 cup blueberries
Instructions

In a mixing bowl, combine the eggs and sugar and whisk well.

Add the yogurt, apple sauce, honey, vanilla, lemon zest, and lemon juice. Whisk well.

Fold in the flour, baking soda, baking powder, and salt.

Fold in the blueberries.

Scoop the batter into muffin cups and bake for 20-25 minutes at 350 degrees Fahrenheit.
