A great chili recipe featuring crunchy cauliflower.
- 1 tbsp Olive Oil
- 1 Onion Chopped
- 1 lb Turkey Sausage Skin removed
- 1 lb Ground Beef
- 1 tbsp Minced Garlic
- 1 cup Chili Powder
- 1/4 cup Cumin
- 1 tbsp Thyme
- 1 tbsp Oregano
- 1 can Crushed Tomatoes 28 ounces
- 1/4 cup Tomato Paste
- 1 cup Water
- 1/4 cup Cocoa Powder
- 1 lb Riced Cauliflower
- 1 lb Light Red Kidney Beans
Heat the olive oil in a large skillet over medium-high heat and add the onion. Cook until tender.
Add the turkey sausage and the ground beef and cook until browned. Add in the garlic and mix.
Add the chili powder, cumin, thyme, and oregano and cook for 10 minutes, stirring frequently.
Add the crushed tomatoes, tomato paste, water and cocoa powder. Cook for 30 minutes on medium heat, stirring frequently.
Add in the riced cauliflower and the kidney beans. Cook for 10 more minutes. Salt and pepper to taste and serve.
