Tofu Vanilla Ice Cream
The easiest vanilla ice cream you'll ever make.
Ingredients
- silken tofu 1 lb.
- ¾ cup refined coconut oil melted
- ½ cup plus 2 tablespoons organic or granulated sugar
- ½ teaspoon kosher salt
- 1 vanilla bean split lengthwise
Instructions

Blend sugar, salt, vanilla, and tofu together until smooth. Slowly pour in oil while the blender is running.

Place mixture in an ice cream maker. It will take longer to get creamy than traditional ice cream but it's so worth it.

Pour into an airtight container and press plastic wrap across the surface.

Freeze for 4 hours.
