Ham and Cheese Cups
Ham plus cheese equals breakfast.
- 6 Eggs
- 1/4 cup Bell Pepper Chopped
- 2 tspn Onion Chopped
- 12 slices Ham
- 1/2 cup Shredded Cheese
Combine eggs, bell pepper, and onion in a bowl and whisk.
In a six muffin baking pan, line the bottom of the cups with 2 slices of ham. Place a layer of cheese on the bottom of the ham cups and pour the egg mixture into the cups.
Bake for 15 minutes at 400 degrees Fahrenheit. Serve topped with chopped scallions and black pepper.
