Salted Pistachio Brittle
Satisfy your sweet tooth with this gorgeous, homemade candy.
Ingredients
- 1 cup sugar
- 1 cup unsalted shelled raw pistachios, very coarsely chopped
- 1/2 cup light corn syrup
- 1 tablespoon unsalted butter
- 1 teaspoon kosher salt
- 3/4 teaspoon baking soda
- Coarse sea salt
- Nonstick vegetable oil spray
Instructions

In a saucepan over medium heat, add corn syrup, sugar, and 3 tablespoons of water to a pan. Bring to boil.

Cook the mixture for 3 minutes. Now add unsalted butter, salt, and unsalted pistachios.

Stir very rapidly until it thickens and becomes a rich golden brown color, about 5 minutes.

Add the baking soda and stir thoroughly to combine. The mixture will bubble up. Have no fear!

Set aside to cool slightly.

Grease a baking sheet and line with parchment paper. Pour the mixture onto the baking sheet. Spread it out as evenly as possible and sprinkle with sea salt. Cool and let harden.

Break apart with a spoon into various sized pieces.
