Coriander Chicken and Rice

This delicious chicken and rice recipe will also fill up your house with an awesome aroma.

Ingredients

  • 2 tbsp Olive Oil
  • 1 cup Basmati Rice
  • 1 tspn Ground Turmeric
  • 2 cups Chicken Stock
  • Salt To taste

Chicken

  • 1 tbsp Olive Oil
  • 1 lb Chicken Breast Cuped
  • 1 tbsp Ground Coriander
  • 1 tbsp Garlic Powder
  • 1 tspn Cayenne Pepper
  • 1 tbsp Salt

Green Beans

  • 1 tbsp Olive Oil
  • 1 lb Green Beans

Sauce

  • 1/2 cup Greek Yogurt
  • 1/4 cup Lemon Juice
  • 1 tspn Garlic Minced
  • Salt To taste

Instructions

Basmati Rice

  1. In a pot, add 1 tbsp of olive oil, rice, turmeric, chicken stock and salt to taste. Mix and bring to a simmer, cover and reduce heat to low until rice is tender. Turn off heat and fluff.

Coriander Chicken and Green Beans

  1. In a mixing bowl, combine the chicken, coriander, garlic powder, cayenne pepper, and salt and mix well. Heat a skillet on medium high, add the olive oil and then the chicken. Cook until the chicken is done.

  2. On another skillet, add 1 tbsp of olive oil on medium high heat and cook the green beans, seasoning it with salt to taste.

Sauce

  1. In a mixing bowl, combine the yogurt, lemon juice, garlic and salt. Mix well.

  2. Serve the sauce on the side with the chicken, rice and green beans. Enjoy.
