Sometimes, you just can't be bothered to get out all the bowls and pans after work. It is in these troubled times that we turn to the eternal classic: the grilled cheese.
Spread 1 1/2 tsp. mayonnaise on 1 side of each bread slice. This'll keep the bread from burning.
Heat a large nonstick skillet over medium heat. Place 2 of your prepared bread slices, mayonnaise side down, in skillet. Top each bread slice with 2 cheese slices and 1 more bread slice, mayonnaise side up. Cook each side of the sandwich until they're both golden brown, around 3 minutes. You'll end up with 4 sandwiches when all the bread is used up.
Most grilled cheese recipes call for butter as the burn deterrent. Mayo has a little less fat (potentially a lot less depending on the brand and variety) and gives the bread a little extra tang.
