Hot Dog Fried Rice

I loved cut-up hot dogs when I was a kid. Hot dog bits on their own isn't much of a meal, though. Let's round things out a bit with some rice and veggies.

Ingredients

  • 1 tbsp. butter
  • 1/2 Onion finely chopped
  • 3 medium carrots peeled and diced
  • 2 hot dogs sliced into coins and halved
  • 1 Garlic clove minced
  • 1 tbsp. sesame oil
  • 2 1/2 c. cooked white rice
  • 2 eggs lightly beaten
  • 2/3 c. frozen peas
  • 2 tbsp. soy sauce
  • 1 scallion thinly sliced

Instructions

  1. In a large skillet over medium heat, melt butter. Add onions, carrots, and hot dog bits and cook for 3 to 5 minutes. It's ready when the onions become translucent. Add garlic and cook until fragrant, about another minute. Add sesame oil to the pan and let heat 1 minute, then add the cooked rice, and let cook for 3 minutes.

  2. Push the rice to one side of the pan and add the eggs, scrambling them in the pan and incorporating them into the rice when they are fully cooked.

  3. Add the peas and the soy sauce to the pan and stir until everything has combined to your liking.

  4. Top with scallions if desired (and they should be). Scoop fried rice onto plates and serve.
