Preheat oven to 350°F. Cook bacon in a large skillet over medium until browned and crisp, 8 to 10 minutes; transfer to paper towels to drain. Crumble bacon, and set aside. Reserve 2 tablespoons bacon drippings in skillet.
Stir together pecans and melted butter on a small rimmed baking sheet; spread in a single layer. Bake in preheated oven until toasted and fragrant, 12 to 14 minutes, stirring halfway through. Remove pecans from oven; sprinkle with 1/4 teaspoon of the salt, and let cool on baking sheet.
Place cranberries in a small microwavable bowl, and stir in bourbon. Microwave on HIGH until hot, 20 to 30 seconds. Let stand until cool; drain, and pat dry with paper towels.
Heat reserved 2 tablespoons bacon drippings over medium-high; add apples and brown sugar, and cook, stirring often, until apples have softened and turned golden, 10 to 12 minutes. Sprinkle with remaining 1/4 teaspoon salt.
Increase oven temperature to broil. Place pita chips on an oven-safe platter or tray. Spoon apples evenly over chips, and sprinkle evenly with cheese. Broil until cheese is melted and just beginning to brown, 2 to 3 minutes. Remove from oven; sprinkle with bacon, pecans, and cranberries. Serve immediately.
