Don't mash your potatoes anymore, smash them! These cheesy smashed potatoes are so crispy on the outside and fluffy on the inside!
Crank the oven to 375° and line a medium cooking sheet with parchment paper. In a big bowl, combine potatoes with butter, garlic and rosemary and season them with salt and pepper.
Spread the spuds out in an even layer on a baking sheet. Bake 'em until they're tender when pricked with a fork, 25-30 minutes. Take 'em out of the oven and flatten them with the bottom of a drinking glass or fork. Top them with a small slice of brie and put them back in the oven. Continue baking until the cheese is melted, about 10 more minutes.
Garnish with parsley and serve.
