Peanut Butter Pancakes

A healthier alternative to regular pancakes for a great weekend breakfast.

Ingredients

  • 1 1/2 cups flour all-purpose
  • 6 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 14/ cups fat-free milk
  • 1/4 cup chunky peanut butter
  • 1 tbsp roasted peanut oil or vegetable oil
  • 1/2 tsp vanilla extract
  • 2 large eggs lightly beaten

Instructions

  1. Lightly spoon the flour into dry measuring cups and level them off with a knife. Combine flour, sugar, baking powder, and salt in a big bowl. In a separate bowl, combine milk and remaining ingredients, then add that to the flour mixture in the first bowl. Stir the whole thing until it turns smooth.

  2. Spoon about 1/4 cup of batter onto a hot nonstick griddle or a large nonstick skillet. Turn the pancakes when tops are covered with bubbles and the edges look cooked.
