Roasted Beets

The trick to perfectly juicy, melt in your mouth beets? Baking in a foil cocoon.

Ingredients

  • 2 lbs raw beets trimmed
  • 3 tablespoons olive oil
  • kosher salt
  • cracked black pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. Rinse and trim the tops off your beets.
  3. Line a baking sheet with aluminum foil. Add beets to the foil and toss with olive oil, salt, and pepper. Create a large packet with your foil to completely surround the beets.
  4. Bake for 45 minutes, or until the beets are tender.
  5. Remove from oven and let cool slightly.
  6. Use a paper towel to rub the skins off the beets and cut them into desired sizes.
  7. Serve as is or alongside your favorite dish.
