Cherry Tomato Sauce

Your weeknight pasta has a fresh new twist.

Ingredients

  • 1 pound pasta
  • 1/2 cup olive oil
  • 3 pints cherry tomatoes
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch sugar
  • 1 cup coarsely chopped fresh basil
  • 1 batch freshly grated parmesan for serving
  • 2 cloves garlic large, finely chopped
  • 1 pinch Kosher salt

Instructions

  1. Heat a large pot of salted water to a boil. Cook according to package instructions and drain. Reserve some pasta water, like 1/4 cup.
  2. In a large skillet, heat olive oil. Add in garlic and toast lightly. Next, mix in sugar, cherry tomatoes, salt, and pepper and cook for 10 minutes. Use a spoon to crush up tomatoes.
  3. Pour in the pasta, a little pasta water, and basil. Toss to combine.
  4. Top with Parmesan.
  5. Serve and enjoy! :D
