Chicken Congee
Set it and forget it. This classic Chinese rice porridge will be cooking while you're at work.

long-grain rice

small dried red chiles
such as Thai or chile de arbol

3" piece ginger, thinly sliced

garlic cloves

kosher salt

Place the chicken, rice, ginger, garlic, chiles, and stock in the slow cooker base.

Cover and cook for 8 hours on low.

Remove ginger and chiles. Top with whatever your heart desires.
