Chicken Congee

Set it and forget it. This classic Chinese rice porridge will be cooking while you're at work.

Ingredients

  • 2 pounds chicken thighs boneless, skinless
  • 8 cups chicken stock
  • 1 cup long-grain rice
  • 3 small dried red chiles such as Thai or chile de arbol
  • 1 3" piece ginger, thinly sliced
  • 2 garlic cloves pressed
  • 1 1/2 teaspoons kosher salt

Instructions

  1. Place the chicken, rice, ginger, garlic, chiles, and stock in the slow cooker base.
  2. Cover and cook for 8 hours on low.
  3. Remove ginger and chiles. Top with whatever your heart desires.
  4. Serve and enjoy! :D
