Sweet Chile-Roasted Salmon

Turn your regular salmon recipe into this delicious dish with a hint of Thai flavor.

Ingredients

  • 1 side skin-on salmon pin-bones removed
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup honey
  • 2 tbsp Asian chile-garlic sauce or sambal oelek ground fresh chile paste
  • 2 tbsp soy sauce
  • 2 tbsp fresh lime juice plus 1 tbsp lime zest
  • 1 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 1 tbsp fresh ginger grated
  • 1 tbsp lemongrass minced
  • 1/4 cup water
  • sliced scallions for garnish
  • lime wedges for garnish
  • red chiles for garnish

Instructions

  1. Preheat the oven to 400°F and cover a baking sheet with aluminum foil, then place the salmon on it.

  2. Mix together the cilantro, the honey, the chile-garlic sauce, the soy sauce, the lime juice and zest, the rice vinegar, the fish sauce, the ginger, and the lemongrass in a small bowl.

  3. Add a 3/4 spoon of the combined sauce over the salmon, then cover loosely with plastic wrap. Let it marinate in the fridge for at least 30 minutes or up to an hour. Add water to the baking sheet (but not on the salmon, just around it).

  4. Bake the salmon in the preheated oven until you can easily stick a fork or knife into the thickest part. Serve immediately with remaining sauce, and top with the three garnishes.
