An awesome and easy fish sandwich recipe from scratch. You can even catch your own cod.
Create a breading station, separating the flour, eggs and panko bread crumbs in 3 separate bowls. Whisk the eggs. Combine the panko and parmesan and mix well.
Coat the cod strips with the flour, then the eggs, and then the panko bread crumbs. Deep fry on medium high or 350 degrees Fahrenheit until golden brown.
To create the sauce, in a mixing bowl, combine the mayonnaise, minced pickle, capers, mustard and lemon juice and mix well.
On a slice of bread, spread the sauce and top with the spring mix salad and a layer of romaine lettuce. Place fried fish strips on top and spread another layer of sauce. Seal with the top sandwich bread slice. Enjoy.
