Miso Noodle Soup With Meatballs

Ingredients

  • 1 tbsp Sesame Oil
  • 1/4 cup Green Onions Sliced
  • 1 tbsp Garlic Chopped
  • 1 tbsp Ginger Minced
  • 2 cups Chicken Stock
  • 1 tbsp Honey
  • 1 tspn Sambal Oelek
  • 1/2 lb Ground Pork
  • 1 tbsp Miso Paste
  • 1 cup Cooked Soba Noodles

Instructions

  1. In a small pot or sauce pan, saute the green onions, garlic and ginger in the sesame oil. Add the chicken stock and bring to a boil, then reduce to a simmer for 8 minutes. Remove the garlic and ginger with a strainer.

  2. In a mixing bowl, combine the honey, sambal oelek, pork and mix well. Form into bite sized meatballs.

  3. Add the miso paste into the broth and drop the meatballs in. Cook for 6 minutes.

  4. Add the soba noodles. Cook until warm and serve.
