A healthy mix of vegetables and a simple dressing.
Cut ends off the cucumber and then cut the cucumber into bite size pieces. Place in a salad bowl.
Cut the tomatoes and avocados into bite size pieces and combine with the cucumber.
Cut the ends off the red onion and remove the outer skin. Slice thinly and combine with the salad. Top with the cilantro.
Add one juice of lemon, salt & pepper to taste. Drizzle the olive oil over the salad and mix well.
