Make-Ahead Chicken and Rice Bake

A simple casserole that is both delicious and keeps well frozen.

Ingredients

  • 1 tbsp butter
  • 1 onion chopped
  • 1 clove garlic minced
  • 4 carrots chopped
  • 4 stalks celery chopped
  • 1 rotisserie chicken shredded
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 3 cups chicken stock

Instructions

  1. In a large skillet, melt the butter over medium-high heat. Add the onion, garlic, carrots, and celery. Cook until the onions are soft, making sure to stir often so it doesn't burn. Pour into a baking pan.

  2. Add in the chicken, rice, soup, chicken stock, and salt & pepper to taste. Cover and bake at 425 degrees Fahrenheit for 30 minutes.

  3. Leftovers can be kept in the freezer for up to 2 months.
