A delicious chicken and rice dinner with shredded zucchinis for the whole family.
In a bowl, combine the chicken thighs, salt, pepper, garlic powder, paprika, dried basil, and oregano. Make sure the chicken is coated evenly well with all the ingredients.
Heat olive oil in a large pan on medium-high heat and cook chicken till browned on both sides. Remove chicken from pan leaving the grease in the pan with the heat on.
Add the zucchinis, rice, garlic powder, chicken broth, and salt & pepper for taste to the pan. Stir and bring to a simmer.
Add the chicken back on top of the rice and close the lid. Bake for 30 minutes at 400 degrees Fahrenheit.
