A refreshing combination of ginger beer, mint, and watermelon infused with rum.
Pour the water and sugar into a sauce pan and stir to mix.
Add the fresh mint and continue stirring, using a wooden spoon to slightly mash the mint while doing so.
Refrigerate until cool.
Pour the mixture through a colander or sift to separate it from the mint.
Blend the watermelon cubes in a blender until smooth and pour into the water and sugar mixture using a sift to remove the watermelon lumps.
In a pitcher, add the mint syrup, the watermelon juice, rum, ginger beer, and lime juice. Stir and pour over ice. Garnish with a watermelon wedge.
