A delicious combination of plum and thyme topped with sparkling prosecco.
Combine the water and sugar in a small sauce pan and bring to a boil and stir until the sugar is completely dissolved. Turn off heat.
Add 6 sprigs of thyme. Stir and let cool.
In a mixer, add the chopped plum and 1 oz of the thyme simple syrup that was just made. Muddle.
Add ice and shake.
Strain on top of ice into a glass and top off with prosecco.
