Fall is tomorrow, and we’re all ready for to break out the apple picking, hayrides, and of course all the pumpkin spice things that we can possibly make and eat. Just to prep you for fall a little more, why not try this recipe for pumpkin spice waffles?

They’re the perfect thing to have with a pumpkin spice latte to warm yourself up and remind you that fall is indeed finally here. The best part? We gave you this recipe a day in advance so you can practice for when fall finally comes. You’re welcome.

This recipe calls for coconut oil instead of the typical butter or oil that you would normally find in a waffle batter. This helps to push the pumpkin and spice flavor into the spotlight while adding a nutty flavor of its own that only complements the dish. In order to make the waffles fluffy and crisp in all the right places, the eggs are separated from yolk and white.

By whipping and aerating the egg whites, this ensures that the waffle batter is lighter and much less heavier than if you’d kept them all together in the first place. So if you’re looking for a light and delicious waffle to to accompany your pumpkin spice latte, this waffle is your answer!
