Slow Cooker Thai Green Curry

Enjoy the taste of Thailand at home with this easy green curry recipe.

Ingredients

  • 5 chicken thighs
  • 2 tbsp mild Thai green curry paste
  • 5 tbsp hot Thai green curry paste
  • 2 tbsp soy sauce
  • 300 g red pepper sliced
  • 200 g green beans
  • 1 chili sliced
  • 400 g coconut milk

Instructions

  1. Season the chicken thighs with salt and pepper and brown on a greased skillet.

  2. Place the chicken on the bottom of a slow cooker. Top with the curry paste, and soy sauce. Cover and cook on high for 2 1/2 hours.

  3. Add the red pepper, green beans, chili, and coconut milk and cook for another 30 minutes.

  4. Serve with Jasmine rice.
