Mussels in White Wine Pesto

The easiest way to enjoy a weeknight seafood feast.

Ingredients

  • mussels 2 lb.
  • 1 cup white wine
  • 1/2 cup pesto
  • salt and pepper

Instructions

  1. Bring wine to boil in a saucepan.
  2. Add mussels to steam, covered, until open- about 3-4 minutes.
  3. Remove and throw away any mussels that don't open.
  4. Now, stir in pesto and season with salt and pepper.
  5. Toss, letting the flavors infuse for a few more minutes.
  6. Serve and enjoy! 😀
