Ingredients

  • 2-3 boneless skinless chicken breasts diced into bite sized pieces
  • short-cut pasta 16 oz
  • jar of your favorite marinara sauce 24 oz
  • Water to fill empty marinara sauce jar
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 medium yellow onion minced
  • 3 cloves garlic minced
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Additional dried Italian seasoning optional
  • Fresh parsley and/or basil minced for garnish

Instructions

  1. Pour oil into a heavy-bottomed pot and heat over medium-high heat. Add chicken and sautee for 5 minutes or until it's mostly cooked through. Season with garlic powder and Italian seasoning. Remove chicken and set aside.
  2. Add onion and garlic to the pot and cook for 3 minutes, or until translucent.
  3. Pour in the marinara along with enough water to fill the jar to the pot. Bring everything to a boil then reduce heat.
  4. Stir in chicken and pasta then cover and cook for 10-15 minutes. Add Parmesan and 1/4 the mozzarella.
  5. Top the pot with the rest of the mozzarella and cook for 3-5 more minutes so that the cheese can melt.
  6. Garnish with herbs, serve, and enjoy! 😀
