Ingredients
- 2-3 boneless skinless chicken breasts diced into bite sized pieces
- short-cut pasta 16 oz
- jar of your favorite marinara sauce 24 oz
- Water to fill empty marinara sauce jar
- 1 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 1 medium yellow onion minced
- 3 cloves garlic minced
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Additional dried Italian seasoning optional
- Fresh parsley and/or basil minced for garnish
Instructions
-
Pour oil into a heavy-bottomed pot and heat over medium-high heat. Add chicken and sautee for 5 minutes or until it's mostly cooked through. Season with garlic powder and Italian seasoning. Remove chicken and set aside.
-
Add onion and garlic to the pot and cook for 3 minutes, or until translucent.
-
Pour in the marinara along with enough water to fill the jar to the pot. Bring everything to a boil then reduce heat.
-
Stir in chicken and pasta then cover and cook for 10-15 minutes. Add Parmesan and 1/4 the mozzarella.
-
Top the pot with the rest of the mozzarella and cook for 3-5 more minutes so that the cheese can melt.
-
Garnish with herbs, serve, and enjoy! 😀
