Mashed Potato Wonton
Stuff those wontons with fluffy mashed potatoes!

Ingredients
- 1 large potato cubed
- 1 tspn salt
- 1 1/2 tbsp butter
- 6 tbsp sour cream
- 4 tbsp grated parmesan you can substitute with vegetarian parmesan if you want
- 1/2 shallot sliced
- 1 garlic clove minced
- 1 tspn thyme
- wonton wrappers
Instructions

Place the cubed potato in a pot with 1 tspn salt and cover with water. Boil until the potato is tender. Drain and mash potato.

Add 1/2 tbsp butter, sour cream, and parmesan to the mashed potato and mix well.

Melt 1 tbsp butter in a pan on medium-high heat and add the shallot, salt and pepper to taste and cook till tender. Add the minced garlic and thyme and mix well. Take off heat.

Add the cooked shallot to the mash potato and mix well.

Place about a tbsp of the mashed potato in the center of a wonton wrapper and fold in half to create a triangle. Seal with water or egg white wash.

Deep fry the wontons in oil at 350 degrees until golden brown. Serve with sour cream dipping sauce.
