Spanish Rice

A little salsa and broth, and you've got some fantastic rice for a dinner side dish.

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 ½ cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa

Instructions

  1. Heat the oil in a big skillet over medium heat. Stir in the onion and cook until it's nice and tender, about 5 minutes.

  2. Mix in the rice, stirring frequently. When the rice starts turning brown, stir in chicken broth and salsa. Reduce the heat, put a cover over the skillet, and let it simmer for 20 minutes, until the rice absorbs the liquid.
