One-Bowl Chocolate Cake

Ingredients
- 2 cups white sugar
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water

Turn the oven up to 350 F. While that's heating up, grease and flour two nine inch round pans.

In a big bowl, stir the sugar, flour, cocoa, baking powder, baking soda and salt together, followed by the eggs, milk, oil and vanilla. Mix that stuff for 2 minutes on a medium-speed mixer. Finally, pour in the boiling water. Don't worry if the batter's a little thin, it's supposed to be. Pour the batter evenly into the prepped pans.

Bake the pans for 30 to 35 minutes in the preheated oven. If you can stick a toothpick in and pull it out clean, they're done. Let the cakes cool in their pans for 10 minutes, then move them to a wire rack to cool completely.
