One-Bowl Chocolate Cake

Ingredients

  • 2 cups white sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Turn the oven up to 350 F. While that's heating up, grease and flour two nine inch round pans.

  2. In a big bowl, stir the sugar, flour, cocoa, baking powder, baking soda and salt together, followed by the eggs, milk, oil and vanilla. Mix that stuff for 2 minutes on a medium-speed mixer. Finally, pour in the boiling water. Don't worry if the batter's a little thin, it's supposed to be. Pour the batter evenly into the prepped pans.

  3. Bake the pans for 30 to 35 minutes in the preheated oven. If you can stick a toothpick in and pull it out clean, they're done. Let the cakes cool in their pans for 10 minutes, then move them to a wire rack to cool completely.
