Cauliflower Fritters

Crispy and crunchy, yet 100% vegetarian!

Ingredients

  • 3 cups cauliflower
  • 2 tspn salt
  • 1 tspn pepper
  • 2 garlic cloves minced
  • 1/2 cup onion chopped
  • 1/4 cup parsley chopped
  • 1/2 cup flour
  • 1/3 cup parmesan
  • 1 egg
  • cooking oil

Instructions

  1. Microwave cauliflower for 15 minutes.

  2. Roughly mash the cauliflower. Add salt, pepper, garlic, onion, parsley, flour, parmesan, and an egg and mix well.

  3. Make a patty with your hands and coat with flour. Fry on medium high until golden brown on both sides. Serve with sour cream and chives.
