Apple Oat Energy Bites

Ingredients
- 2 1/2 cups rolled oats
- 1 cup grated Granny Smith apple loosely packed
- 1/2 cup almond butter
- 1/2 cup unsweetened shredded coconut plus more for coat
- 1/4 cup honey
- 1 tsp salt
- 1 tsp ground cinnamon
- chia seed for coat
Instructions

Combine oats, apple, almond butter, coconut, honey, salt, and cinnamon in the bowl of a food processor. Process the heck out of it until it's fully combined.

Scoop the mixture into 2 tablespoon-portions and roll into balls. Roll each around in the coconut flakes (or chia seeds, if you prefer). Arrange the balls on a sheet pan lined with parchment paper and let it chill in the fridge for at least 2 hours. Serve immediately. You can store any leftovers in an airtight container in the fridge for up to 5 days.
