Asparagus with Balsamic Tomatoes is the Perfect Spring Side Dish

Asparagus with Balsamic Tomatoes

Ingredients

  • 1 lb asparagus trimmed
  • 2 tsp olive oil extra virgin
  • 1 1/2 cups grape tomatoes halved
  • 1/2 tsp fresh garlic minced
  • 2 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 3 tbsp goat cheese crumbled
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Cook the asparagus in boiling water until they turn crisp and tender, then drain.

  2. Heat the olive oil in a large skillet, and add the tomatoes and garlic. Cook that stuff for 5 minutes. Stir in the vinegar, and cook for 3 more minutes. Stir in the salt. Arrange asparagus on a platter, and top with tomato mixture. Sprinkle with cheese and pepper.
