Bake Cornbread Like A Cowboy

Skillet Cornbread

Best served with beans in the middle of a desert.

  • 3 eggs
  • 2 cups buttermilk
  • 2 1/4 cups flour
  • 3 cups cornmeal
  • 4 tbsp sugar
  • 3 tspn salt
  • 2 tspn baking soda
  • 2 1/2 tspn baking powder
  • 1 cup shredded cheddar
  • 1/2 cup butter


  1. In a mixing bowl, combine the eggs and buttermilk and whisk.

  2. In a separate mixing bowl, combine the flour, cornmeal, sugar, salt, baking soda, baking powder, and shredded cheddar. Pour in the egg and buttermilk mixture and mix well.

  3. In an cast-iron skillet, melt the butter on medium-high heat. Pour in the cornmeal dough and spread out evenly. Bake for 20 minutes at 425 degrees Fahrenheit.
