Ingredients

  • 8 ounces Parmesan cheese freshly grated
  • 4 teaspoons fresh thyme leaves

Instructions

  1. Turn the oven up to 300 F. While that's heating up, line a couple of baking sheets with parchment paper.

  2. Combine the cheese and thyme leaves in a bowl. Drop nice, big teaspoonfuls of the mix onto the prepped baking sheet. Make sure the blobs are at least 2 inches apart. Lightly press the blobs with your fingers until they're flat circles, about 2 inches in diameter.

  3. Bake the trays in the preheated oven until the circles are slightly browned and crisp, 8 to 10 minutes. Let them cool slightly on the baking sheets for about 2 minutes, then loosen their edges with a spatula and lift them off the parchment paper. Transfer the crisps to wire racks and let them cool completely until they've firmed up, about 10 minutes.
