Baking the bananas helps to soften them and give them a baked and sweeter flavor, while the sugar coating on the outside caramelizes and makes them taste almost as though there is a layer of brown sugar and caramel on the outside as a layer of crunchiness alongside the graham cracker.
If you’re looking to add another layer of crunch to the pudding, add a layer of vanilla wafers! This is common practice in the South for their banana pudding, and for good reason. The wafers absorb all of the flavor while retaining their crunch and vanilla flavor, making them the perfect sweet treat!
