Great with some greens, on a roll, or on its own!
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- ¼ teaspoon ground black pepper
- 2 cups cooked chicken meat chopped
- ½ cup blanched slivered almonds
- 1 stalk celery chopped
Toast the almonds in a frying pan over medium-high heat, shaking them around regularly. Keep a close eye on these, as they can burn very easily.
In a medium bowl, mix the mayo, lemon juice, and pepper. Add the chicken, almonds, and celery to the bowl and toss them around to get an even coat.
