Eggnog Pie
A quick holiday dessert you can make in the microwave!
Ingredients
- 1 .25 ounce package unflavored gelatin
- ¼ cup cold water
- 1 cup milk
- ½ cup white sugar
- 2 eggs lightly beaten
- ¼ cup rum
- 1 cup whipping cream
- ¼ pinch white sugar
- 1 9 inch pie shell baked
- ½ teaspoon ground nutmeg

In a small mixing bowl, combine the gelatin and cold water and leave them aside to soften. In a separate glass bowl, combine the milk and 1/2 cup sugar. Microwave the glass bowl for 3 minutes or until the milk starts boiling

Pour the hot milk into the beaten eggs in a steady stream, whisking constantly. Cook this newly-made custard in the microwave for about 2 minutes, pausing to whisk after each minute, until it thickens slightly. Stir in the softened gelatin and mix until melted, then stir in the rum.

Let this stuff cool to room temperature. You can put it in the fridge to speed this up, though you should take it out and stir it occasionally to prevent the gelatin from setting too soon.

In another medium bowl, whip the cream until soft peaks form, then beat in 1/4 cup sugar.

Set aside a 1/2 cup of the whipped cream for garnish in the fridge. Fold the remaining whipped cream into the cooled eggnog mixture. Pour the filling into the pie crust and leave it in the fridge for 4 hours or overnight to solidify.

Garnish the pie with the reserved whipped cream and the ground nutmeg.
