  • 3 eggs beaten
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 2 cups rolled oats
  • 1 cup chopped pecans

  1. Combine the eggs, vanilla and raisins in a small bowl. Cover it up with plastic wrap or a lid and let it stand for an hour.

  2. Turn the oven up to 350 F. Meanwhile, cream the butter, brown sugar, and white sugar together in a big bowl. Sift the flour, cinnamon, and baking soda together, then stir that mixture into the creamed mixture. Lastly, stir in the raisin mixture from step one along with the rolled oats and pecans.

  3. Drop teaspoonfuls of the dough onto a cookie sheet. You don't need to prep the sheet. Bake the cookies for 10 minutes, or until lightly browned.
