Chickpea Salad Sandwich
A yummy vegan alternative to tuna salad.
- 15 ounce can chickpeas
- 1 rib celery
- 3 green onions
- 1 to 2 tablespoons vegan mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon celery seed
- Kosher salt & ground pepper
- 4 slices bread
- Lettuce, spring green mix, or sprouts
Slice up the celery and green onions.
Drain and rinse the chickpeas, then mash them up in a bowl using a fork.
Combine the chickpeas with the chopped celery and green onions, vegan mayo, lemon juice, and celery seed. Add about ¼ to ½ teaspoon kosher salt based on your preferences, and fresh ground pepper to taste. Add some more mayo if the mix is too dry.
Spread the chickpea spread around on a slice of your favorite bread, then top it with greens and another slice of bread.
