The classic sweet and savory Japanese sauce.
- 3 cups soy sauce
- 1 ½ cups mirin
- 1 orange juiced
- 6 ounces chopped fresh pineapple with skin
- 1 Granny Smith apple cored and chopped
- 2 cloves garlic
- 1 teaspoon grated fresh ginger root
- 4 tablespoons white sugar divided
Combine all of the ingredients, though with only half the sugar, in a saucepan. Get that stuff boiling, then reduce the heat and let it simmer for 20 minutes. If the sauce isn't sweet enough for you, use the remaining sugar to adjust it. Strain the sauce through a fine mesh sieve and let it cool.
