If You Still Haven’t Had Enough Pumpkin Spice, Try These Pancakes

Pumpkin Protein Pancakes

High protein, pumpkin and cinnamon flavored pancakes.

Ingredients

  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1 tbsp ground oatmeal
  • 1/2 tspn ground cinnamon
  • 1 tbsp coconut sugar
  • coconut oil

Instructions

  1. In a mixing bowl, combine the eggs, pumpkin puree, oatmeal, cinnamon, and coconut sugar and whisk well.

  2. Heat a tbsp of coconut oil in a pan on medium-high heat and cook pancakes till brown on both sides.

  3. Serve with your favorite syrup.
