It may be Spring, but I don't think anyone will turn down a maple cookie.

Ingredients

  • 1 cup butter softened
  • 1 cup packed brown sugar
  • 1 egg
  • 1 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 4 cups all-purpose flour
  • cup granulated sugar for decoration

Instructions

  1. Turn the oven up to 350 F and grease your cookie sheets.

  2. In a big bowl, cream the butter with the brown sugar. Add in the egg, maple syrup and vanilla, and mix until they're well blended. Sift together the flour, salt and baking soda and stir it into the mix until it's all well blended. Shape the batter into 1-inch balls and roll them around in the granulated sugar. Place the balls on the cookie sheets about 2 inches apart and flatten slightly.

  3. Bake the sheets for 8 to 10 minutes in the preheated oven. Let cool on wire rack.
