Keto Shepherd's Pie

Ingredients

  • 2 pounds beef ground
  • 2 tbsp olive oil
  • 1 onion medium, diced
  • 2 cloves garlic finely chopped
  • 1 tbsp Thyme fresh
  • 1 tbsp salt
  • 3 large tomatoes diced
  • 8 fluid oz beef stock
  • 10 oz carrot diced
  • 10 oz peas forzen
  • 10.5 oz corn start can
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon basil
  • 1/8 teaspoon black pepper

Mash

  • 28 oz cauliflower cut into florets
  • 3 oz butter
  • 3,5 oz parmesan cheese
  • 2 egg yolk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Topping

  • 2/3 cup parmesan cheese

Instructions

  1. Preheat oven to 400°F.

  2. Cook beef, onion and garlic over medium heat until no pink remains. Drain any fat.

  3. Stir in soup, Worcestershire sauce, salt, basil, and pepper. Spread into the bottom of a 2 qt casserole dish. Sprinkle with peas, carrots, and corn.

  4. Boil a saucepan ⅔ filled with water. Add the cauliflower and cook for 10 minutes, or until the cauliflower is tender. Drain the cauliflower well then return to the saucepan. Add the butter. Blend the cauliflower into a puree using a stick blender. Add the parmesan cheese and blend until melted and mixed through. Add the egg yolks, salt, and pepper and blend well. 

  5. Spoon mashed cauliflower over top and top with parmesan cheese.

  6. Baked 25-30 minutes or until bubbly.
