Lasagna Dip with Pasta Chips

Ingredients

  • 1 1/2 cup cooked sweet Italian sausage
  • 3/4 cup marinara sauce such as Classico Riserva
  • 6 oz small-curd cottage cheese
  • 4 oz whole-milk ricotta cheese
  • 2 oz Parmesan cheese grated
  • 1 1/2 tsp chopped fresh oregano
  • 1 1/2 tsp chopped fresh basil
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper
  • 12 oz pre-shredded mozzarella divided
  • 1 1/2 tsp salt divided
  • 1 tsp chopped fresh flat-leaf parsley
  • 8 oz uncooked lasagna noodles
  • vegetable oil

Instructions

  1. Crank the oven to 350°F. Stir together sausage, marinara, cottage cheese, ricotta, Parmesan, oregano, basil, black pepper, crushed red pepper, 2 1/4 cups of the mozzarella, and 1 teaspoon of the salt in a medium bowl. Spoon that mixture into a 2-cup baking dish. and sprinkle the remaining 3/4 cup mozzarella over the top. Bake the dish in the preheated oven until golden and bubbly, 20 to 25 minutes. Sprinkle with chopped parsley.

  2. While the dip is baking, cook the lasagna noodles according to the directions on their package. Drain the noodles and pat them dry with paper towels, then cut them into triangles.

  3. Pour oil to a depth of 3 inches into a Dutch oven and heat it over high to reach 360°F. Fry the noodles in the oil until golden brown and crispy, 2 to 3 minutes. Drain 'em on paper towels, and sprinkle with remaining 1/2 teaspoon salt. Serve pasta chips with dip.
