Lemon Brownies

Ingredients

Brownies:

  • ¾ cup all-purpose flour
  • ¾ cup white sugar
  • ½ cup unsalted butter softened
  • ½ teaspoon sea salt
  • 3 eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest plus more for icing

Icing:

  • 1 cup confectioners' sugar
  • ¼ cup lemon juice
  • ¼ teaspoon vanilla extract

Instructions

  1. Turn the oven up to 350 F. While that's heating up, grease an 8-inch square baking dish.

  2. With an electric mixer, beat the flour, white sugar, butter, and sea salt together in a bowl until they're well mixed. In a separate bowl, whisk the eggs, 2 tablespoons lemon juice, and 1 tablespoon lemon zest together. Mix the egg mix into the flour mix and beat them together on medium speed until smooth, about 3 minutes. Pour the combined batter into the prepped baking dish.

  3. Bake the dish in the preheated oven until you can stick a toothpick in and pull it out clean, about 23 to 25 minutes. Let the dish cool until its bottom is warm to the touch.

  4. To make the icing, whisk the confectioners' sugar, 1/4 cup lemon juice, vanilla extract, and your preference of lemon zest together in a bowl until it's smooth. Spread it over the finished brownies.
