Cheesy Bacon Asparagus Casserole

A cheesy asparagus casserole with large pieces of crispy bacon. The perfect side dish for the perfect feast.

Ingredients

  • 6 strips bacon cut into 1" pieces
  • 2 cloves garlic minced
  • 1/4 cup flour
  • 1 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded Gruyere cheese
  • Kosher salt
  • ground black pepper
  • crushed red pepper flakes
  • 1 bunch asparagus ends trimmed
  • 1 cup Ritz crackers crushed

Instructions

  1. Preheat your oven to 375°. 

  2. Cook bacon until crispy in a large skillet over medium-high heat. Remove from pan and drain on a paper towel. Leave 1/4 cup of grease in the pan.

  3. To same skillet, add garlic and saute about 1 minute. Add flour and stir until it turns golden brown. Slowly pour in the milk and cream, whisking until smooth. Let simmer until it thickens. Add ½ cup each of the cheddar and Gruyère cheeses and stir until fully melted.

  4. Add the cooked bacon back to the sauce and season with salt and pepper. Add a pinch of red pepper flakes. 

  5. Place asparagus in a 9x13 baking pan and pour the sauce over. Top with remaining ½ cup of each cheese and the crushed Ritz Crackers. 

  6. Cover with foil and bake until the asparagus is tender. Remove foil and bake until cheese is melted.
