Make a Grain Bowl that tastes like a Deconstructed Egg Roll

Egg Roll in a Bowl

Ingredients

  • 1 lb ground chicken breast
  • 3 cups coleslaw mix
  • 3 stalks green onion
  • 5 tablespoons coconut aminos
  • 1 1/2 tablespoons grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • ½ tablespoon grated garlic

Instructions

  1. Heat up the olive oil in a large skillet over medium high heat.
  2. Add the ground chicken and cook for 3-5 minutes, or until it is golden brown and good through.
  3. Thinly slice the green onion and add about 3/4 of it into the pan. Reserve some for the garnish.
  4. Sautee the ginger, garlic, and coconut aminos, stirring until fragrant.
  5. Now, add the shredded carrots, cabbage, and sesame oil. Cook until flavors are infused and tender.
  6. Garnish, serve and enjoy! 😀
