Mini Quiches with a Unique Twist

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 2 tablespoons ice-cold water
  • 1/4 cup diced bacon
  • 1/2 cup diced onion
  • 1/2 cup crumbled blue cheese
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 24-cup mini muffin tin.
  2. In a food processor, pulse together the flour, butter, and water until a dough forms. Divide the dough into 24 portions and press each portion into the muffin cups.
  3. In a skillet, cook the bacon until crisp. Add the onion and sauté until soft and golden brown.
  4. Spoon the bacon and onion mixture into the muffin cups, then sprinkle the blue cheese on top.
  5. Whisk together the cream, eggs, salt, and pepper in a bowl until smooth. Pour the mixture into the muffin cups, filling each one about 3/4 full.
  6. Bake the quiches for 20-25 minutes or until golden brown and set. Allow them to cool for a few minutes before serving.
