Cornbread Waffles and Chili

A savory combination of cornbread and chili with a morning favorite, waffles.

Ingredients

  • 6 tbsp unsalted butter melted, plus more for greasing
  • 1 1/2 cups milk
  • 1 tbsp white vinegar
  • 1 tbsp sugar
  • 1 large egg
  • 1 cup flour
  • 1 cup cornmeal finely ground
  • 1 tspn baking soda
  • 1 tspn baking powder
  • 1 1/2 tspn garlic powder
  • 1/2 tspn paprika
  • 1 1/2 tspn kosher salt
  • 1/2 tspn black pepper
  • 1 cup shredded cheddar cheese plus more for garnish
  • 2 cups chili
  • sour cream for serving
  • green onion chopped for serving

Instructions

  1. Grease a waffle iron with melted butter or nonstick spray. Set the heat to medium.

  2. In a large bowl, whisk together the melted butter, milk, vinegar, sugar, and egg. Add the flour, cornmeal, baking soda, baking powder, garlic powder, paprika, salt, and pepper and whisk to incorporate. Fold in the cheddar cheese with a rubber spatula.

  3. Pour 1 scant cup of batter onto the waffle iron and cook until golden brown, about 5 minutes. Repeat with the remaining batter.

  4. Serve the waffles warm and topped with chili, more cheddar cheese, sour cream, and green onions.
