Mountain Dew Waffles- Because Why Not?

Mountain Dew Waffles

Because sometimes you just wanna make something silly in the kitchen.

Ingredients

SYRUP

  • 2 cups granulated sugar
  • 1 cup Mountain Dew soda
  • 1/2 cup light corn syrup
  • 1 drop electric green food coloring optional

WAFFLES

  • 2 cups all-purpose flour Should be about 8 1/2 oz.
  • 1 tsp. baking powder
  • 1 tsp. table salt
  • 1/2 tsp. baking soda
  • 1 cup sour cream
  • 1 cup Mountain Dew soda
  • 4 large eggs beaten
  • 6 Tbsp. unsalted butter, melted 3 oz.
  • 15 drops electric green food coloring optional
  • cooking spray
  • salted butter for serving

Instructions

  1. First, let's make the syrup: Stir together sugar, Mountain Dew, corn syrup, and, if if you want that authentic color, food coloring in a medium saucepan over medium heat. Bring that sucker to a boil then reduce heat to medium-low, and simmer until thickened and syrupy. Should take 10 to 15 minutes. Let the syrup cool for 10 minutes. This syrup is okay to serve either warm or room temperature. You can also store it in an airtight container at room temperature up to 3 days.

  2. Next, the green waffles: Preheat a waffle iron to medium-high. Stir together flour, baking powder, salt, and baking soda in a large bowl. Stir together sour cream, Mountain Dew, and eggs in a different large bowl until it's all combined. Pour the second mixture into first mixture and whisk the whole thing until smooth. Add melted butter and, if desired, food coloring (and it should be). Give the whole thing one more whisk until it's thoroughly combined.

  3. Let's put it all together! Coat the waffle iron with cooking spray. Pour about 1/3 cup of batter into each quadrant (how much you'll need depends on how big the iron is), close lid, and cook for 2 to 3 minutes. It should be lightly browned and firm. Top your waffles with some butter and as much green syrup as you like.

Recipe Notes

This probably goes without saying, but this is a dessert recipe, not a breakfast one. Don't have Mountain Dew for breakfast.
